MONFORTE DAIRY Ruth Klahsen owns and operated Ontario’s oldest artisanal cheese company, founded in 2003. Monforte is convinced the small things do indeed make a difference, that agriculture is best practiced on a human scale, and that their cheeses, each in its own way, reflect something a little deeper than the technology behind mass manufactured food - a little of the poetry and passion of life itself.
PURGATORY Purgatory is a solid goat cheddar with lots of umami intensity going on. It would stand up to whiskey, bourbon or ryes. Not to be taken lightly. this is a serious cheese. NIAGARA FINE FOODS Mario Pingue Sr. made prosciutto and various sausages in his cantina, a small room carved out of the Niagara escarpment in the little village of Queenston. Then in 1975 a restaurant and banquet facility in Niagara Falls, the company and reputation grew. Today his sons Mario & Fernando oversee the creation of Pingues’ amazing charcuterie.
